For example: maintaining the exchange ratio, obtaining an advantage of value in the exchange, controlling specific sections of the playing field, etc. I believe that Chess Variant players should concentrate on enjoying the games, rather than attempting to 'master' them all. But after playing a few dozen of them, hopefully a wide range of forms, the players may find that they are capable of any.
