Emmor Ray Sperry has created a number of board games, whose rules can be freely downloaded from his WWW site. One of them is Mountain KingTM, a chess variant for two to four people. On his web site, you see the rules of this game, and a picture of a board. The board has size 11 by 11, but with eight squares marked unaccessible. Players have the normal set of pieces; only pawns have a somewhat different movement, and the object of the game is to get a kind to the center square of the board.
Another game of Sperry is CollectorTM: this two-player game is played with the normal pieces without the white and black pawns, but with 48 neutral pawns. The neutral pawns are placed on all the empty squares in the opening setup. Neutral pawns do not move; you may not take the opponents king. The object is to take at least 25 pawns.
A third game of Sperry is SpaceTM. This is a three dimensional chess variant.
